Scrub Island Resort, Spa & Marina Serves Up New Round of Culinary Enhancements

BRITISH VIRGIN ISLANDS (February 21, 2017) – Scrub Island Resort, Spa & Marina, a private-island, AAA Four Diamond hotel in the British Virgin Islands, has announced a number of major changes to the resort’s world-class culinary offerings, including the appointment of Devon Liburd as the new food and beverage manager, the opening of Donovan’s Lounge and new menus at the fine-dining Caravela Restaurant and the casual, open-air Tierra! Tierra! restaurant.

As food and beverage manager, Liburd maintains service standards and directs operations at Scrub Island’s three restaurants. Currently pursuing Sommelier certification, Liburd has an extensive background in wine and has assisted the resort in enhancing its wine lists. Devon first joined the Scrub Island culinary team in 2010 as restaurant manager. Prior to his time at the resort, he worked as purchasing manager and food and beverage manager at Biras Creek Resort on Virgin Gorda.

Devon will also oversee the new Donovan’s Lounge, which is named after Donovan’s Reef, the restaurant that originally welcomed sailors to Scrub Island long before the resort was developed. The new lounge, located inside the Caravela Restaurant, features a relaxing ambiance with comfortable seating and a drink menu highlighting Caribbean favorites, martinis and reimagined classics designed by the bar staff. One such inspiration is the ‘Scrub Spirit,’ a delicious blend of Sebastian’s Rum from Tortola, white rum, orange juice, pineapple juice and passion fruit juice.

The resort’s signature, fine-dining Caravela Restaurant has enhanced its menu options. With outdoor seating and breathtaking views of the marina and neighboring islands, Caravela now offers a variety of new dinner options, from fresh seafood, such as Crab Meat Stuffed Salmon and Blackened Mahi-Mahi, to Prime Cut Rib Eye Steak and Rack of Lamb. The restaurant has also premiered a weekly Sushi Night, which has become popular with guests as well as locals.

Another resort favorite, the open-air restaurant, Tierra! Tierra!, has similarly unveiled a new menu featuring unique appetizers, homemade soups and signature sandwiches. Guest favorites include appetizers such as Conch Fritters and Jerked Chicken Wings, and the Scrub Island Burger, topped with caramelized onions, sautéed mushrooms and melted Swiss cheese. Breakfast service has been relocated to Tierra! Tierra!, so patrons can begin their day with Eggs Benedict, Belgian waffles and splendid views of the Caribbean Sea. Both restaurants also offer gourmet, handmade ice cream with flavors such as Rum & Raisin, which is an island favorite.

Other culinary improvements at the resort include new coffee service from Virgin Islands Coffee Roasters in the Gourmet Market & Café, with additional enhancements planned this summer to the island’s One Shoe Beach Bar & Grill, which will feature expanded seating and a refreshed menu.
