Scrub Island Resort Celebrates Easter with Festive Island Brunch at Cardamom & Co.

Scrub Island Resort has announced the details of its Easter Brunch at the resort’s signature restaurant, Cardamom & Co. Recently renovated, the restaurant features a sophisticated island vibe with dramatic views overlooking the marina and neighboring islands.

Guests can celebrate Easter Sunday with a specially curated brunch menu featuring a mix of classic brunch favorites and Caribbean-inspired dishes. Menu highlights include steak and eggs with Scrub Island spice rub, lobster eggs Benedict, and a three-egg omelet with all the essentials.

Additional selections include lox waffles with smoked salmon, capers and onion, Caribbean conch chowder, and Caesar salad. Heartier entrées include pan-seared snapper with lemon thyme beurre blanc and coconut risotto, grilled boneless chicken thigh with guava and pink peppercorn glaze, roasted boneless leg of lamb with sweet potato mash and rosemary red wine reduction, and seafood pasta with shrimp, clams, and mussels in a white wine rosé cream sauce.

Guests can finish the festive meal with indulgent desserts including sticky toffee pudding with ice cream, cheesecake with raspberry coulis, and coconut cream pie.
