Dino will lead the culinary direction for the resort’s food and beverage operations, including the sophisticated Cardamom & Co., breezy Donovan’s Reef, toes-in-the-sand One Shoe Beach Bar, and bespoke catering for weddings, meetings, and private events.

A seasoned Executive Chef, Dino brings more than four decades of international culinary leadership to his new role at Scrub Island Resort. His extensive experience at resorts and hotels includes time as Executive Chef at Sandals Resorts and at the Hilton Brighton Metropole. Prior to that, as Executive Chef at the iconic QE2 in Dubai, as well as numerous other notable properties in UAE, South Africa and the UK.
Marked by numerous accolades and awards, he is also a member of the Chaine des Rotisseurs holding the position of “Maitre Rotisseur,” as well as the Emirates Culinary Guild, South African Chefs Association and the Gaelic Chefs Association.
Four venues offer food and beverage options for overnight or day guests. The newly refreshed Cardamom & Co. overlooks the marina and pool and features a sophisticated vibe for all-day dining. Donovan’s Reef Marina Bar & Grill is an outdoor grill, which offers popular Caribbean favorites and features a thatched roof and open-air views of the resort and neighboring islands. Guests may also order a cocktail from the swim-up bar and take in the panoramic view from the upper pool. Along North Beach, One Shoe Beach Bar features a private pool, freshly made handhelds and other light bites, and a refreshing cocktail service.
